Join us on a Friday night, April 16, 2021 for a one-of-a-kind French-Japanese omakase dinner featuring a range of highly exclusive Juyondai sake which has gained a cult reputation around the world next to Premier Cru and Grand Cru wines from Burgundy’s cradle, Domaine Chanson!


No sake connoisseur needs an introduction to the exclusive world of Juyondai which is reputed for its limited-quantity labels of artisanal sake crafted by a 15th generation Takagi brewery dating back to the Edo Period, 1615.


With a special selection of 3 labels tailor-made for the Hong Kong market, this omakase dinner will showcase Juyondai Red, Black and Gold Label, which feature expressive notes ranging from yellow peach and cherry blossom with opulent flavour (Red Label) to luscious, tropical aromas of lychee with subtle umami and fresh acidity (Black Label) and luxuriously perfumed with melon and lush stone fruit flavours (Gold Label) that exemplifies elegance and harmony through masterful brewing of Yamada Nishiki rice.


Uniquely in Japan, each Juyondai label is based on a separate strain of rice grown in an individual paddy, similar to the wines of Burgundy. Hence, this exclusive wine & sake pairing dinner also features 3 premium picks by the Hotel’s Sommelier, Alan Sun, from Domaine Chanson, a winery founded in 1750 in Côte de Beaune – the historic heart of the wine region – that is currently owned by the Bollinger Champagne house.


On the 8-course menu by Chef Oliver Li, among innovative French-Japanese creations precisely matching the wine selection, you will be tempted with French Caviar & Uni, signature Cristal Sushi with Tuna Tartare, luxuriant Homard, seasonal fish as a showcase of Ikejime technique, Abalone & Foie Gras, as well as prized Miyazaki Ozaki Wagyu Beef.


Meanwhile, the 3 precious labels of Juyondai will be introduced by a certified Sake Sommelier of Sake Service Institute (SSI) of Japan from Jebsen Fine Wines, Ken Chan, who spent several years in the Land of the Rising Sun mastering his knowledge as he submerged himself in the authentic Japanese culture. A member of the Hong Kong Sommelier Association and a holder of WSET Level 3 Certification, Ken Chan specialises in advocating the enjoyment and culture of wine & sake.


The wine and sake selection was made available to this occasion through a partnership with Jebsen Fine Wines, a company that represents some of the world’s most prestigious wineries!
